  • 2 cups cooked chicken, shredded Use rotisserie chicken or leftovers for best flavor.
  • 1 cup rice, uncooked You can swap some for quinoa or brown rice.
  • 2 cups chicken broth
  • 1 cup cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 cup milk
  • 1 cup frozen mixed vegetables Peas, carrots, and corn work well.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese Optional but highly recommended!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, milk, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Pour the mixture into a greased baking dish, spreading it evenly.
Baking
  1. Cover with aluminum foil and bake for 30 minutes.
  2. Remove the foil, stir to combine, and sprinkle cheese over the top if desired.
  3. Bake uncovered for an additional 10-15 minutes, or until the rice is tender and cheese has melted.
  4. Let cool for a few minutes before serving.
