  • 8 oz pasta of your choice Wide noodles like fettuccine are recommended
Sauce
  • 1 cup cottage cheese Choose a smooth variety for best blending
  • 1/2 cup grated Parmesan cheese Freshly grated makes a difference!
  • 2 cloves garlic, minced The more fragrant the garlic, the better
  • 1/2 cup unsweetened almond milk Or any milk of your preference
  • Salt and pepper to taste
  • Fresh parsley, chopped For garnish

Method
 

Cooking
  1. Follow package instructions to cook the pasta until al dente, then drain and set aside.
  2. In a blender, combine the cottage cheese, Parmesan, garlic, almond milk, and a pinch of salt and pepper. Blend until silky smooth.
  3. Pour the blended sauce into a saucepan and warm it over medium heat without boiling.
  4. Incorporate the cooked pasta into the warm sauce, tossing gently to coat.
  5. Serve warm, garnished with fresh parsley.
