  • 1 cup Greek yogurt This adds creaminess to the sauce.
  • 2 cloves garlic, minced Don't skip this ingredient for added flavor.
  • 1/2 cup grated Parmesan cheese For a lovely nutty richness.
  • 2 cups spinach Optional; can be substituted with kale or zucchini.
  • to taste Salt and pepper Adjust seasoning according to personal preference.
  • 2 tbsp Olive oil For cooking the chicken.

Preparation
  1. Cook the whole wheat pasta al dente according to package instructions. Drain and set aside.
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the diced chicken and sauté until beautifully browned and cooked through, about 6-7 minutes.
  3. Introduce the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to let it burn.
  4. Lower the heat and stir in the Greek yogurt and grated Parmesan cheese, mixing until well combined.
  5. Add the cooked pasta to the skillet. If using spinach, toss that in now, allowing it to wilt slightly from the heat.
  6. Season with salt and pepper to your liking and serve hot.
