- Cook the whole wheat pasta al dente according to package instructions. Drain and set aside.
- In a large skillet, heat a splash of olive oil over medium heat. Add the diced chicken and sauté until beautifully browned and cooked through, about 6-7 minutes.
- Introduce the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to let it burn.
- Lower the heat and stir in the Greek yogurt and grated Parmesan cheese, mixing until well combined.
- Add the cooked pasta to the skillet. If using spinach, toss that in now, allowing it to wilt slightly from the heat.
- Season with salt and pepper to your liking and serve hot.
