  • 2 pieces chicken breasts Boneless and skinless
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced Use more if you love garlic
  • 1 cup heavy cream Alternative: half-and-half or plant-based cream
  • 1 cup grated Parmesan cheese Freshly grated for best results
  • 8 oz spiral pasta Can substitute with penne or fettuccine
  • to taste salt and pepper
  • to taste fresh parsley for garnish

Method
 

Cooking
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chicken breasts and sear them until golden brown and cooked through, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sauté for about a minute until fragrant.
  5. Pour in the heavy cream, stirring to combine, then gradually add the Parmesan cheese and stir until melted and creamy.
  6. Cook the spiral pasta according to package instructions, then drain and add to the skillet with the sauce.
  7. Slice the seared chicken and return to the skillet, tossing until well combined. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes
