For the Fish Cakes
  • 1 pound white fish fillets, fully thawed and patted dry
  • 2 cups mashed potatoes, cooked and completely cooled
  • 1 tablespoon sour cream
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon Italian-style seasoning
  • 2 large eggs
  • 2 cups panko-style breadcrumbs
  • 1 optional lemon wedges, for serving
  • 1 optional tartar sauce or yogurt-based sauce, for serving

Method
 

Cooking the Fish
  1. Preheat your air fryer to 375°F. Line the basket with parchment paper to minimize sticking.
  2. Lightly season the fish with salt and pepper, placing it in a single layer.
  3. Air fry for 10-12 minutes, until it flakes easily with a fork. Once done, remove and let it cool slightly.
Preparing the Mixture
  1. In a large bowl, mix the cooled mashed potatoes, sour cream, salt, black pepper, minced garlic, chopped parsley, Italian seasoning, and eggs until smooth.
  2. Flake the cooled fish into small pieces and gently fold it into the mixture, maintaining some texture.
Shaping and Coating
  1. Pour the panko breadcrumbs into a shallow dish.
  2. Shape the mixture into patties about 2½ to 3 inches wide and roll each patty in the breadcrumbs, pressing gently to coat.
  3. Arrange on a parchment-lined tray and refrigerate for about 30 minutes.
Air Frying the Cakes
  1. Increase the air fryer temperature to 425°F and arrange the chilled fish cakes in a single layer.
  2. Air fry for 15-20 minutes, flipping halfway through until they are crisp and golden brown.
Resting and Serving
  1. Let the fish cakes rest for about 5 minutes after cooking.
  2. Serve warm with a squeeze of lemon and your favorite sauce.
