Chicken
  • 6 pieces boneless, skinless chicken breasts
Lemon Garlic Herb Butter Filling
  • 1.5 bulbs whole garlic (cloves peeled)
  • 6 tablespoons unsalted butter For flavor
  • 0.5 cups all-purpose flour
  • 1 cup chicken stock For richness
  • 12 tablespoons salted butter, softened For the filling
  • 2 cups finely grated Gruyère-style cheese Can substitute with mozzarella or cheddar
  • 0.75 cups finely chopped fresh herbs (parsley, chives, tarragon) For freshness
  • 1 teaspoon fresh lemon zest Enhances flavor

Breading
  • 1 cup all-purpose flour For coating

  • 3 large eggs, beaten For binding

Method
 

Prepare the Garlic Butter
  1. In a medium saucepan over medium heat, melt the unsalted butter.
  2. Finely grate the garlic directly into the pan and cook for about 1–2 minutes, stirring constantly until fragrant but not browned.
  3. Stir in the flour and continue cooking for another 2 minutes.
  4. Slowly whisk in the chicken stock until the mixture is smooth and thick. Remove from heat and let it cool completely.
Make the Filling
  1. Once cooled, transfer the garlic mixture to a mixing bowl.
  2. Beat on medium speed, gradually adding the softened salted butter until creamy and smooth.
  3. Mix in the grated cheese, chopped herbs, lemon zest, and curry powder if using, until fluffy and well combined.
Chill the Mixture
  1. Spoon the butter mixture onto plastic wrap, shaping it into a compact log.
  2. Wrap it tightly and freeze until completely firm, which should take at least 2 hours.
Prepare the Chicken
  1. Slice each chicken breast horizontally to butterfly them without cutting all the way through.
  2. Place them between plastic wrap and gently pound until evenly flattened.
  3. Keep these chilled until you’re ready to assemble.
Shape the Chicken
  1. Cut the frozen butter log into 6 equal portions.
  2. Place one portion in the center of each chicken breast and roll tightly, sealing the edges well to enclose the filling.
Breading Process
  1. Heat the oil to 350°F and preheat your oven to the same temperature.
  2. Season the flour with salt and black pepper.
  3. Roll each chicken piece in this flour, dip into the beaten eggs, and then coat with breadcrumbs.
  4. For extra crunch, repeat the egg and breadcrumb coating.
Fry and Bake
  1. Fry the chicken in batches for about 4–5 minutes until golden brown.
  2. Transfer them to a baking sheet and bake for another 10–12 minutes or until the chicken is fully cooked through.
Final Touches
  1. After removing from the oven, let the chicken rest for 2–3 minutes before serving.
  2. Slice carefully so that the lemon-garlic butter flows from the center.
  3. Serve it with a fresh salad, roasted vegetables, or creamy mashed potatoes.
