  • 1 cup grated Parmesan cheese Freshly grated is preferable.
  • 1 cup breadcrumbs Use regular or gluten-free breadcrumbs.
  • 2 pieces eggs Beaten, for coating.
  • to taste Salt and pepper For seasoning.
  • to taste Olive oil For frying.
  • optional Parsley For garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In one bowl, beat the eggs. In another bowl, mix the breadcrumbs and Parmesan cheese.
  3. Season the chicken breasts with salt and pepper.
Coating and Cooking
  1. Dip each chicken breast into the egg, then coat with the breadcrumb-Parmesan mixture.
  2. Heat olive oil in a skillet over medium heat and fry the chicken breasts until golden brown on both sides.
  3. Transfer the chicken to a baking dish and bake for about 15-20 minutes until cooked through.
Serving
  1. Garnish with parsley if desired and serve with sides.
