Ingredients
  

Pasta and Meat
  • 1 cup elbow macaroni
  • 1 lb ground beef or turkey Choose based on preference.
Vegetables and Aromatics
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) chili beans (drained and rinsed)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Bell peppers (optional) diced Add based on preference.
Liquids and Spices
  • 2 cups low-sodium chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
Cheese
  • 1 cup shredded sharp cheddar cheese

Method
 

Preparation
  1. Chop the onion, garlic, and bell peppers (if using). Measure out all your ingredients for smooth cooking.
  2. Heat a skillet over medium heat. Add the chopped onions and garlic, cooking until translucent, about 3-4 minutes.
  3. Add the ground meat to the skillet, breaking it apart and cook until browned, about 5-7 minutes.
Cooking
  1. Transfer the meat mixture into your crock pot. Add the elbow macaroni, diced tomatoes (including juices), chili beans, chicken broth, spices, and bell peppers. Stir to combine.
  2. Set your crock pot to low for 4-6 hours or high for 2-3 hours, stirring occasionally.
  3. About 15 minutes before serving, stir in the shredded cheddar cheese and let it melt into the mixture.
