  • 4 pieces boneless, skinless chicken breasts
  • 1 packet dry ranch dressing
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 10 oz can Rotel diced tomatoes and green chilies Do not drain
  • 1 15 oz can whole kernel corn Drained
  • 1 15 oz can black beans Drained and rinsed
  • 1 8 oz block plain cream cheese
  • 2 pieces fresh limes Juiced
  • ½ cup chicken broth

Method
 

Preparation
  1. Place the chicken breasts into the Crock Pot, spread out evenly.
  2. Add the drained and rinsed black beans and drained corn to the pot.
  3. Add the can of Rotel diced tomatoes, do not drain the juices.
  4. Sprinkle onion powder, ranch dressing packet, and ground black pepper over the top.
  5. Squeeze the juice of the fresh limes over the ingredients.
  6. Pour in the chicken broth to keep the chicken moist.
  7. Place the block of cream cheese on top of all the ingredients.
  8. Cover the Crock Pot with its lid and cook on HIGH for 3-4 hours or on LOW for 5-6 hours, until the chicken reaches 165°F.
  9. Once cooked, carefully remove the chicken and shred it into bite-sized pieces, returning it to the pot.
  10. Stir everything together until the cream cheese coats all the ingredients.
  11. Serve hot and enjoy!
