  • 2 lbs chuck roast
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pieces hoagie rolls
  • 8 slices provolone cheese Can substitute with Swiss or sharp cheddar.
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Place the chuck roast in your slow cooker.
  2. Add the sliced onion and minced garlic on top of the roast.
  3. Pour in the beef broth and add the Worcestershire sauce, followed by salt and pepper.
  4. Cover the slow cooker and cook on low for about 8 hours or on high for 4 hours, until the beef is tender.
  5. Once cooked, remove the beef from the slow cooker and shred it with two forks.
  6. Return the shredded beef to the slow cooker, stirring it back into the au jus.
  7. Toast the hoagie rolls until golden and crisp.
  8. Layer the shredded beef and provolone cheese onto each toasted roll.
  9. Serve the sandwiches with a small bowl of the au jus on the side for dipping.
  10. Garnish with parsley if desired.

Notes

If you have leftovers, they’ll keep well in the refrigerator for up to 3 days. Store in an airtight container. For longer storage, freeze the shredded beef and thaw overnight before reheating. Sear the chuck roast for deeper flavor before slow cooking.
