Preparation
- Place the chuck roast in your slow cooker.
- Add the sliced onion and minced garlic on top of the roast.
- Pour in the beef broth and add the Worcestershire sauce, followed by salt and pepper.
- Cover the slow cooker and cook on low for about 8 hours or on high for 4 hours, until the beef is tender.
- Once cooked, remove the beef from the slow cooker and shred it with two forks.
- Return the shredded beef to the slow cooker, stirring it back into the au jus.
- Toast the hoagie rolls until golden and crisp.
- Layer the shredded beef and provolone cheese onto each toasted roll.
- Serve the sandwiches with a small bowl of the au jus on the side for dipping.
- Garnish with parsley if desired.

If you have leftovers, they’ll keep well in the refrigerator for up to 3 days. Store in an airtight container. For longer storage, freeze the shredded beef and thaw overnight before reheating. Sear the chuck roast for deeper flavor before slow cooking.
