- Prepare the ingredients by halving the baby potatoes if they are not already.
 - Add the halved baby potatoes to the crockpot, ensuring they are evenly placed at the bottom.
 - Place the chicken breasts on top of the potatoes.
 - In a small bowl, combine minced garlic, grated parmesan cheese, chicken broth, Italian seasoning, salt, and pepper. Mix well until blended.
 - Pour the garlic-parmesan mixture over the chicken and potatoes, making sure everything is well coated.
 - Cover the crockpot and set to cook on low for 6-7 hours or high for 3-4 hours.
 - Once cooked, remove the lid and gently stir the mixture to combine the flavors.
 - Garnish with chopped fresh parsley before serving.
