  • 1 cup shredded cheese (cheddar recommended) Feel free to use gouda or pepper jack for a kick.

Preparation
  1. Place the diced potatoes and chopped onion in your crockpot.
  2. Pour in the chicken or vegetable broth, ensuring all ingredients are submerged.
Cooking
  1. Set your crockpot to low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
  2. About 30 minutes before serving, stir in cream or milk and shredded cheese, mixing gently.
  3. Season with salt and pepper to taste.
