  • 2 cups purple cabbage, finely shredded
  • 1 cup carrots, grated
  • ½ cup mayonnaise
  • 1 tbsp white vinegar
  • ½ tbsp apple cider vinegar
  • 2 tsp sugar
  • ½ tsp celery seed

Method
 

Preparation
  1. In a medium bowl, whisk together the mayonnaise, white vinegar, apple cider vinegar, sugar, celery seed, salt, and pepper until you achieve a smooth consistency.
  2. Thinly slice the green and purple cabbage and grate the carrots to ensure they are uniform in size.
  3. In a large bowl, toss the prepared veggies with the dressing, ensuring all the greens are well coated.
  4. Cover your coleslaw and refrigerate it for at least an hour before serving to allow the flavors to deepen.

Notes

You can mix and match vegetables; consider adding sliced bell peppers or using a yogurt-based dressing for a lighter touch. Also, feel free to toss in ingredients like cranberries or sunflower seeds for added texture.
