Ingredients
  

For the cookie dough
  • 1 cup unsalted butter, softened Make sure the butter is softened and not melted.
  • 1 cup brown sugar Light brown sugar is recommended.
  • 1/2 cup granulated sugar Can be substituted with coconut sugar.
  • 2 large eggs Add eggs one at a time.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can swap half with whole wheat flour.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon Essential for flavor enhancement.
  • 1 cup chopped apples Granny Smith apples give a nice tart bite.
For drizzling
  • caramel sauce

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon until well mixed.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Gently fold in the chopped apples.
Baking
  1. With a spoon, drop generous spoonfuls of dough onto a lined baking sheet, giving them some space to spread.
  2. Bake for 10-12 minutes until the edges turn golden.
  3. Allow them to cool slightly, then drizzle with caramel sauce before serving.
