  • 4 large large flour tortillas
  • 2 cups cooked seasoned ground beef (beef, turkey, or plant-based substitutes)
  • 2 cups crispy tater tots
  • 1 cup shredded cheddar cheese (or any cheese that melts beautifully)
  • 1/2 cup sour cream (Greek yogurt is a great alternative)
  • 1/4 cup salsa (homemade or jarred)
  • Salt and pepper to taste
  • Olive oil (for a golden finish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cook the tater tots according to the package instructions until they’re perfectly crispy.
  3. In a skillet, heat your cooked ground beef until warmed through. Season with salt and pepper to taste.
  4. On each tortilla, layer the seasoned beef, crispy tater tots, and shredded cheddar cheese.
  5. Add a dollop of sour cream and a spoonful of salsa on top.
  6. Roll the tortillas tightly, then place them seam-side down in a greased baking dish.
  7. Brush the tops with olive oil.
  8. Bake for about 15-20 minutes, or until they are golden and heated through.
  9. Serve warm with additional salsa on the side if desired.
