- Preheat your oven to 400°F (200°C).
- Cook the tater tots according to the package instructions until they’re perfectly crispy.
- In a skillet, heat your cooked ground beef until warmed through. Season with salt and pepper to taste.
- On each tortilla, layer the seasoned beef, crispy tater tots, and shredded cheddar cheese.
- Add a dollop of sour cream and a spoonful of salsa on top.
- Roll the tortillas tightly, then place them seam-side down in a greased baking dish.
- Brush the tops with olive oil.
- Bake for about 15-20 minutes, or until they are golden and heated through.
- Serve warm with additional salsa on the side if desired.
