  • 5 cloves garlic, minced
  • ½ teaspoon red pepper flakes Adjust based on spice preference
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 25 ounces tomato basil pasta sauce
  • 28 ounces diced canned tomatoes
  • 4 cups chicken broth
  • 2 teaspoons kosher salt, divided
  • 12 pieces lasagna noodles, uncooked and broken into 2-inch pieces
  • ½ cup heavy cream Optional for extra creaminess
  • 1 cup shredded mozzarella cheese For topping
  • ½ cup freshly grated parmesan cheese For topping
  • ½ cup ricotta cheese For topping
  • 6 tablespoons fresh basil, finely chopped For garnish

Method
 

Cooking Steps
  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent.
  2. Stir in the ground beef, cooking until it’s browned all over.
  3. Mix in the minced garlic, red pepper flakes, kosher salt, oregano, and tomato paste; stir until fragrant.
  4. Pour in the tomato basil sauce, diced tomatoes, and chicken broth. Bring to a gentle boil.
  5. Stir in the broken lasagna noodles along with the remaining kosher salt. Reduce the heat and let it simmer until the noodles are tender.
  6. For a richer soup, stir in the heavy cream. Add shredded mozzarella or parmesan for an extra creamy texture.
  7. Ladle the soup into bowls and top with dollops of ricotta, mozzarella, parmesan, and garnish with fresh basil.
