  • 1 can chickpeas, rinsed and drained
  • 1 ripe avocado, diced
  • 1 cup feta cheese, crumbled
  • 2 cups mixed greens or spinach
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
Dressing Ingredients
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, toss together the rinsed chickpeas, diced avocado, crumbled feta cheese, mixed greens, cherry tomatoes, and thinly sliced red onion.
Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
Combine
  1. Drizzle the dressing over the salad and toss gently to combine. Be careful with the avocado so you don’t mash it!
Serve or Chill
