Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large casserole dish, melt the garlic butter over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the rice, chicken pieces, chicken broth, heavy cream, salt, pepper, and thyme to the dish. Stir everything together until well combined.
  4. Cover the dish tightly with aluminum foil and bake in the preheated oven for 45 minutes.
  5. After 45 minutes, remove the foil, sprinkle cheese on top if using, and bake for an additional 15 minutes until the chicken is cooked through and rice is fluffy.
  6. Allow the dish to rest for a few minutes before serving.
