  • 1 lb ground chicken Look for a mix of dark and light meat for better flavor.
  • 1/2 cup breadcrumbs Dried breadcrumbs work best.
  • 1/2 cup grated Parmesan cheese Adds rich flavor.
  • 1/4 cup chopped parsley For freshness.
  • 1 clove garlic, minced Enhances flavor.
  • 1 large egg Acts as a binder.
  • 1 tsp onion powder Adds depth of flavor.
  • 1 tsp garlic powder For extra garlic flavor.
  • to taste Salt and pepper Season to your liking.
  • 1/4 cup ketchup (optional) For topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, add the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, onion powder, garlic powder, salt, and pepper.
  3. Use your hands or a spoon to mix all the ingredients until well combined, being careful not to overmix.
  4. Shape the mixture into a loaf.
  5. Line a baking sheet with parchment paper.
  6. Transfer the shaped meatloaf onto the prepared baking sheet. Optionally, spread ketchup on top.
Cooking
  1. Place the baking sheet in the preheated oven and bake for 45-50 minutes until cooked through and golden brown on top.
  2. Let the meatloaf rest for a few minutes before slicing.

Notes
