  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese divided
  • 1 cup breadcrumbs plain or Italian-seasoned
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp low-sodium soy sauce optional
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté the diced onion in a skillet over medium heat until soft, around 5 minutes.
  3. In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until well combined.
  4. Shape the mixture into a loaf and transfer it to the greased baking dish.
  5. Top it with remaining Parmesan and optionally sprinkle some paprika or Italian seasoning.
  6. Bake for 45-50 minutes or until your meatloaf reaches an internal temperature of 165°F (74°C). Let it rest for about 10 minutes before slicing.

Notes
