Preparation
- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- Sauté the diced onion in a skillet over medium heat until soft, around 5 minutes.
- In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until well combined.
- Shape the mixture into a loaf and transfer it to the greased baking dish.
- Top it with remaining Parmesan and optionally sprinkle some paprika or Italian seasoning.
- Bake for 45-50 minutes or until your meatloaf reaches an internal temperature of 165°F (74°C). Let it rest for about 10 minutes before slicing.

Notes
For a personal touch, swap out breadcrumbs for crushed crackers or forgo the soy sauce for a lighter flavor. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
