- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
- In a skillet over medium heat, sauté the diced onions for about 5 minutes until they're soft and fragrant.
- In a large bowl, mix together the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese. Stir until everything is well combined.
- Shape the mixture into a loaf in your greased baking dish.
- Sprinkle the remaining Parmesan cheese on top.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Let the meatloaf rest for about 10 minutes before slicing.
