  • 1 lb ground chicken Can substitute with ground turkey for a different flavor.
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese Use high-quality Parmesan for best flavor.
  • 1 cup breadcrumbs Plain or Italian-seasoned.
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce Low-sodium recommended.
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté the diced onions for about 5 minutes until they're soft and fragrant.
  3. In a large bowl, mix together the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese. Stir until everything is well combined.
  4. Shape the mixture into a loaf in your greased baking dish.
  5. Sprinkle the remaining Parmesan cheese on top.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Let the meatloaf rest for about 10 minutes before slicing.

Notes
