Ingredients
  

For the Marinade
  • 3 tablespoons olive oil Extra virgin recommended
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese Freshly grated preferred
  • 1 teaspoon dried Italian herbs
  • to taste Salt and pepper Adjust according to preference
For the Skewers
  • 1 pound chicken breast, cut into cubes
  • as needed Wooden skewers, soaked in water Soak for at least 30 minutes

Method
 

Marinating Chicken
  1. In a bowl, combine olive oil, minced garlic, Parmesan cheese, Italian herbs, salt, and pepper.
  2. Add chicken cubes to the marinade, mixing well, and let marinate for at least 30 minutes.
Preparing the Skewers
  1. Thread the marinated chicken and vegetables onto the skewers.
  2. Preheat the grill to medium-high heat.
Grilling
  1. Grill the skewers for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Notes

Serve hot with a dipping sauce like ranch or a light vinaigrette for extra flavor. If you have leftovers, let the skewers cool down, then store them in an airtight container in the fridge for up to three days. To reheat, warm them in the oven or microwave.
