  • 2 cups cherry tomatoes, halved Can substitute with grape tomatoes
  • 4 cloves garlic, minced

Method
 

Preparation
  1. Warm olive oil in a large pan over medium heat until shimmering.
  2. Generously season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
  3. Sear the chicken in the pan undisturbed for about 5-7 minutes on each side until a nice golden-brown crust forms.
Cooking
  1. Add minced garlic and halved cherry tomatoes to the pan. Cook until tomatoes are just beginning to soften, about 3-4 minutes.
  2. Lower the heat and sprinkle mozzarella cheese over the chicken, then cover the pan with a lid. Cook for an additional 5 minutes until the cheese melts.
  3. Serve warm, garnished with fresh basil, alongside pasta, rice, or crusty bread.
