Preparation
- Warm olive oil in a large pan over medium heat until shimmering.
- Generously season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
- Sear the chicken in the pan undisturbed for about 5-7 minutes on each side until a nice golden-brown crust forms.
Cooking
- Add minced garlic and halved cherry tomatoes to the pan. Cook until tomatoes are just beginning to soften, about 3-4 minutes.
- Lower the heat and sprinkle mozzarella cheese over the chicken, then cover the pan with a lid. Cook for an additional 5 minutes until the cheese melts.
- Serve warm, garnished with fresh basil, alongside pasta, rice, or crusty bread.
