For the banana bread
  • 3 pieces ripe bananas Should be speckled and soft for the best flavor.
  • 1/3 cup melted brown butter Can be substituted with coconut oil for a dairy-free version.
  • 1/2 cup sugar Adjust sweetness to your liking.
  • 1 large egg, beaten For a vegan option, replace with a flax egg.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 cup gluten-free all-purpose flour Ensure it contains xanthan gum.
For the streusel
  • 1/4 cup brown sugar
  • 2 tablespoons gluten-free flour
  • 1 tablespoon melted butter Can also be replaced with coconut oil.
  • 1 teaspoon cinnamon Can be swapped for nutmeg or pumpkin spice.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan liberally.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted brown butter, combining well with the bananas.
  4. Add the sugar, beaten egg, and vanilla extract, mixing until well combined.
  5. In a separate bowl, combine the baking soda and salt, then gradually add this mixture to the banana mixture.
  6. Slowly incorporate the gluten-free flour, stirring until just combined; avoid overmixing.
  7. To make the streusel, mix together the brown sugar, gluten-free flour, melted butter, and cinnamon until crumbly.
  8. Pour the banana bread batter into the prepared pan and sprinkle the streusel generously on top.
  9. Bake for about 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let it cool before slicing into it and enjoy every bite!
