- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted brown butter, combining well with the bananas.
- Add the sugar, beaten egg, and vanilla extract, mixing until well combined.
- In a separate bowl, combine the baking soda and salt, then gradually add this mixture to the banana mixture.
- Slowly incorporate the gluten-free flour, stirring until just combined; avoid overmixing.
- To make the streusel, mix together the brown sugar, gluten-free flour, melted butter, and cinnamon until crumbly.
- Pour the banana bread batter into the prepared pan and sprinkle the streusel generously on top.
- Bake for about 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
