  • 2 cups fresh spinach Fresh spinach is recommended.
  • 1 cup crumbled feta cheese Adjust according to taste preference.
  • 2 tablespoons olive oil For sautéing.
  • 2 cloves garlic, minced Add to oil for flavor.

  • to taste Parmesan cheese for serving Optional topping for added flavor.

Preparation
  1. Cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the fresh spinach and cook until wilted.
  4. Stir in the cooked gnocchi and crumbled feta cheese, mixing well.
  5. Season with salt and pepper to taste.
  6. Serve warm, topped with grated Parmesan cheese if desired.
