Ingredients

For the Cookie Dough
  • 1 cup unsalted butter, softened Make sure it's at room temperature for best results.
  • 1 cup granulated sugar Can be replaced with coconut sugar for a less processed option.
  • 1 cup brown sugar, packed
  • 2 large eggs Should be at room temperature.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can be substituted for a gluten-free flour blend.
  • 1 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Use dairy-free chocolate chips for a vegan version.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is smooth and slightly fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined—be careful not to overmix.
  6. Gently fold in the chocolate chips.
  7. Drop spoonfuls of the dough onto your prepared baking sheet, leaving space between each dollop.
  8. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
