Preparation of Tzatziki Sauce
- In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, and salt until smooth. Set aside in the fridge to chill.
Marinating the Chicken
- Marinate the chicken breast in your chosen marinade (olive oil, lemon juice, garlic, and herbs) for at least 30 minutes.
Cooking the Chicken
- Preheat the grill and cook the marinated chicken for 6-7 minutes per side until golden brown.
Assembling the Bowls
- In a bowl or plate, layer the cooked rice or quinoa as the base.
- Slice the grilled chicken and place it atop the grains.
- Add the cherry tomatoes, cucumber, red onion, bell pepper, olives, and sprinkle with feta cheese.
- Drizzle with olive oil, season with salt and pepper, and garnish with fresh parsley.

- Serve the bowls with tzatziki sauce and lemon wedges.
Notes
Marinate chicken overnight for richer flavor. Store leftovers in an airtight container in the fridge for up to three days.
