Ingredients
  

For the Greek Chicken Bowls
  • 2 cups cooked rice or quinoa Your choice of grain
  • 1 pound chicken breast Marinated and grilled
  • 1 cup cherry tomatoes Halved
  • 1 cucumber Diced
  • 1 red onion Thinly sliced
  • 1 each bell pepper Diced
  • 1/2 cup kalamata olives Pitted and sliced
  • 1/2 cup feta cheese Crumpled
  • 1/4 cup fresh parsley Chopped
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Lemon wedges for serving
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 each cucumber Grated and drained
  • 1 clove garlic Minced
  • 1 teaspoon lemon juice
  • Salt to taste

Method
 

Preparation of Tzatziki Sauce
  1. In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, and salt until smooth. Set aside in the fridge to chill.
Marinating the Chicken
  1. Marinate the chicken breast in your chosen marinade (olive oil, lemon juice, garlic, and herbs) for at least 30 minutes.
Cooking the Chicken
  1. Preheat the grill and cook the marinated chicken for 6-7 minutes per side until golden brown.
Assembling the Bowls
  1. In a bowl or plate, layer the cooked rice or quinoa as the base.
  2. Slice the grilled chicken and place it atop the grains.
  3. Add the cherry tomatoes, cucumber, red onion, bell pepper, olives, and sprinkle with feta cheese.
  4. Drizzle with olive oil, season with salt and pepper, and garnish with fresh parsley.
Serving
  1. Serve the bowls with tzatziki sauce and lemon wedges.

Notes

Marinate chicken overnight for richer flavor. Store leftovers in an airtight container in the fridge for up to three days.
