Ingredients
  

Main ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved Fresh cherry tomatoes enhance flavor.
  • 1 cup fresh spinach Alternatively, can use kale.
  • 1 cup feta cheese, crumbled Can substitute with goat cheese.
  • 1/2 cup black olives, sliced
Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
For cooking
  • 1 tablespoon olive oil For searing the chicken.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat.
  3. Season the chicken breasts with garlic powder, oregano, salt, and pepper, then add them to the skillet.
  4. Sear the chicken on both sides until golden brown, about 5 minutes per side.
  5. Add the cherry tomatoes, spinach, olives, and feta cheese on top of the chicken.
  6. Cover the skillet and transfer it to the preheated oven.
  7. Bake for about 25-30 minutes, or until the chicken is cooked through (165°F internal temperature).
  8. Serve hot and enjoy!

Notes
