Preparation
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, minced garlic, chopped red onion, parsley, dill, lemon zest, salt, and pepper. Gently mix until just combined.
- Form the mixture into 1.5-inch meatballs and arrange them on the parchment-lined baking sheet. Drizzle with olive oil.
Cooking
- Bake the meatballs for 18-20 minutes or until golden and cooked through.
- While the meatballs bake, prepare the tzatziki by mixing together Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, and a pinch of salt. Set aside to chill.
Serving
- Serve the warm meatballs with a good dollop of tzatziki either drizzled on top or alongside.
