Ingredients
  

For the Meatballs
  • 1 lb ground chicken You can swap with turkey if preferred.
  • 1/2 cup breadcrumbs Panko works for extra crunch.
  • 1 large egg
  • 2 cloves garlic, minced Aroma of fresh garlic!
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped A flavor gem!
  • 1 tsp lemon zest For that zing!
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil For a golden finish.
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil Again, because it’s just that good.
  • 1 tbsp chopped dill
  • 1 pinch salt

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, minced garlic, chopped red onion, parsley, dill, lemon zest, salt, and pepper. Gently mix until just combined.
  3. Form the mixture into 1.5-inch meatballs and arrange them on the parchment-lined baking sheet. Drizzle with olive oil.
Cooking
  1. Bake the meatballs for 18-20 minutes or until golden and cooked through.
  2. While the meatballs bake, prepare the tzatziki by mixing together Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, and a pinch of salt. Set aside to chill.
Serving
  1. Serve the warm meatballs with a good dollop of tzatziki either drizzled on top or alongside.

Notes
