Ingredients
  

For the meatballs
  • 1 lb ground beef or lamb Can substitute with ground turkey or chicken
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free option
  • 1/4 cup chopped fresh parsley Can substitute with mint or dill
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For serving
  • 1 cup cooked rice Jasmine or basmati work beautifully
  • 1 cup diced cucumbers
  • 1 cup cherry tomatoes, halved
  • 1/2 cup tzatziki sauce Store-bought is fine, homemade is delightful

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground meat, breadcrumbs, parsley, Parmesan, garlic, oregano, salt, and pepper. Mix until everything is well combined.
  3. Shape the mixture into meatballs about the size of a golf ball.
  4. Place the meatballs on a baking sheet lined with parchment paper.
Cooking
  1. Bake for 20-25 minutes or until they are cooked through and golden brown.
Serving
  1. In serving bowls, layer your cooked rice, fresh cucumbers, cherry tomatoes, and the meatballs on top.
  2. Drizzle with tzatziki sauce and a touch of olive oil, and then serve it all warm.

Notes
