For the Tzatziki

  • 1/2 cup grated cucumber
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the ground turkey, breadcrumbs, Parmesan cheese, parsley, garlic, oregano, salt, and pepper until everything is well combined.
  3. Shape the mixture into meatballs, about 1-1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake for 20-25 minutes, or until the meatballs are cooked through and golden brown.
  2. While they’re baking, make the tzatziki by combining Greek yogurt, grated cucumber, lemon juice, and olive oil in a bowl. Mix well and refrigerate until you’re ready to serve.
  3. Once the meatballs are done, serve them warm alongside the tzatziki.

Notes

For serving variations, pair the meatballs with a Greek salad, warm pita bread, or quinoa tabbouleh. You can also make wraps using warm pita filled with meatballs, tzatziki, and fresh veggies.
