  • 1 large onion Choose a large onion for best results.

  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper Adjust based on spice preference.

Preparation
  1. Cut off the top of the onion and peel away the outer layers, then make deep cuts in a star pattern, being careful not to cut all the way through.
  2. Soak the prepared onion in buttermilk for at least 30 minutes.
  3. In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  4. Remove the onion from the buttermilk and dredge it gently in the flour mixture, ensuring the seasoning gets into the cracks.
  5. Preheat your grill and brush the onion with oil before placing it on the grill over indirect heat.
Cooking
  1. Cover the onion and grill for about 30-40 minutes until golden and crispy on the outside and tender inside.
  2. Serve warm with dipping sauce.

Notes

For added creativity, consider experimenting with different spices in the flour mixture or serve with vibrant salsa. Store leftovers in an airtight container in the fridge for up to three days.
