Cooking the Beef
- Heat a skillet over medium heat. Add the ground beef, breaking it apart as it cooks.
- Once browned, drain any excess grease, then stir in your taco seasoning with 1/4 cup of water.
- Let it simmer for about 5 minutes to meld the flavors.
Warm and Assemble
- While the beef is cooking, warm the tortillas in a dry skillet or microwave until pliable.
- Lay each tortilla flat and layer with a scoop of rice, seasoned beef, nacho cheese, chipotle sauce, sour cream, cheddar, and mozzarella.
Grilling
- In a clean skillet, sprinkle about 2 tablespoons of shredded cheese.
- Place the burrito seam-side down and grill until the cheese melts and a crunch develops.
- Flip and repeat until golden brown.
