  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas

Method
 

Cooking the Beef
  1. Heat a skillet over medium heat. Add the ground beef, breaking it apart as it cooks.
  2. Once browned, drain any excess grease, then stir in your taco seasoning with 1/4 cup of water.
  3. Let it simmer for about 5 minutes to meld the flavors.
Warm and Assemble
  1. While the beef is cooking, warm the tortillas in a dry skillet or microwave until pliable.
  2. Lay each tortilla flat and layer with a scoop of rice, seasoned beef, nacho cheese, chipotle sauce, sour cream, cheddar, and mozzarella.
Grilling
  1. In a clean skillet, sprinkle about 2 tablespoons of shredded cheese.
  2. Place the burrito seam-side down and grill until the cheese melts and a crunch develops.
  3. Flip and repeat until golden brown.
