- Start by seasoning both sides of your chicken breasts with olive oil, salt, and pepper. Grill over medium-high heat for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
- While the chicken is grilling, toss the broccoli florets with olive oil, lemon juice, and a pinch of salt. Roast at 400°F for 15-20 minutes until they’re brown and crisp-tender.
- Make your grains according to the package instructions and keep them warm.
- In a saucepan, melt butter over medium heat. Add the minced garlic and sauté until fragrant. Stir in the heavy cream, season with salt and pepper, and let it simmer gently until it thickens.
- In each serving bowl, layer the warm grains, sliced grilled chicken, and roasted broccoli. Drizzle with the creamy garlic sauce and garnish with parsley or chives, if desired.
