Preparation
- Preheat oven to 375°F (190°C).
 - In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until fragrant.
 - Stir in ground turkey and cook until browned, about 5-7 minutes. Season with smoked paprika, cumin, chili powder, salt, and pepper.
 - Add red bell pepper and spinach, cooking for another 2-3 minutes until softened.
 - Meanwhile, boil diced sweet potatoes in a separate pot until tender (about 10 minutes). Drain well.
 
Assembly and Baking
- In a baking dish, layer the cooked sweet potatoes and turkey mixture, and pour chicken broth over the top.
 - If desired, top with shredded cheese, then bake for 15-20 minutes, or until hot and bubbly.
 - Let it cool slightly before serving. Enjoy!
