  • 1 lb ground turkey substitutable with ground chicken or beef
  • 2 medium sweet potatoes, peeled and diced can substitute with butternut squash
  • 1 cup spinach fresh or frozen, thawed
  • 1 cup low-sodium chicken broth helps keep the casserole moist
  • 1 tbsp olive oil for sautéing
  • 1 tsp smoked paprika adds flavor
  • 1 tsp ground cumin adds spice
  • 1/2 tsp chili powder to taste
  • Salt and pepper to taste
  • 1/2 cup shredded cheese, optional for topping
Aromatics
  • 2 cloves garlic, minced adds flavor

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until fragrant.
  3. Stir in ground turkey and cook until browned, about 5-7 minutes. Season with smoked paprika, cumin, chili powder, salt, and pepper.
  4. Add red bell pepper and spinach, cooking for another 2-3 minutes until softened.
  5. Meanwhile, boil diced sweet potatoes in a separate pot until tender (about 10 minutes). Drain well.
Assembly and Baking
  1. In a baking dish, layer the cooked sweet potatoes and turkey mixture, and pour chicken broth over the top.
  2. If desired, top with shredded cheese, then bake for 15-20 minutes, or until hot and bubbly.
  3. Let it cool slightly before serving. Enjoy!
