  • 2 lbs chicken breasts Can substitute with chicken thighs for a richer flavor.
  • 1 cup pineapple chunks Fresh or canned will do.
  • 1/2 cup teriyaki sauce
  • 1/4 cup soy sauce Can substitute with tamari for a gluten-free version.
  • 1/4 cup brown sugar Can substitute with honey or sugar alternatives.
  • 1 tbsp minced garlic
  • 1 tbsp grated ginger
  • to taste salt
  • to taste pepper
  • to taste chopped green onions For garnish.

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker.
  2. In a separate bowl, mix together the pineapple chunks, teriyaki sauce, soy sauce, brown sugar, minced garlic, grated ginger, salt, and pepper.
  3. Pour the mixture over the chicken.
Cooking
  1. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and flaking.
  2. Once done, shred the chicken and stir to coat in the sauce.
  3. Garnish with chopped green onions before serving.

Notes
