Ingredients
  

Pasta and Protein
  • 8 oz whole wheat pasta
  • 2 medium chicken breasts, diced
Vegetables
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
Flavorings
  • 2 tablespoons olive oil
  • 1 each lemon, juiced
  • 1/2 cup grated Parmesan cheese Substitute with feta if preferred.
  • to taste salt and pepper

Method
 

Preparation
  1. Cook the whole wheat pasta according to the package instructions. Drain it well and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until it's golden brown, about 7-8 minutes, stirring occasionally.
  3. Toss in the minced garlic and sauté for another minute until the aroma fills your kitchen.
  4. Add the fresh spinach to the skillet and cook until it wilts down, vibrant and emerald green.
  5. Gently fold the cooked pasta into the skillet, mixing everything together thoroughly.
  6. Squeeze fresh lemon juice over the pasta and sprinkle in the Parmesan cheese. Stir until fully combined.
  7. Taste and season with salt and pepper to your liking.
  8. Serve warm, enjoying the delightful mingling of flavors.

Notes
