Preparation
- Preheat your oven to 400°F (200°C).
- On a large sheet pan, place the chicken breasts evenly spaced apart.
- Drizzle the chicken with olive oil, then sprinkle garlic powder, Italian seasoning, salt, and pepper over the top.
Cooking
- Bake for 20 minutes.
- Take the pan out and top each chicken breast with marinara sauce; pile on the mozzarella and sprinkle with Parmesan.
- Add the mixed veggies around the chicken on the pan, drizzling them with olive oil.
- Pop it back in the oven for another 15-20 minutes until the cheese is bubbling and the chicken is fully cooked.
- Serve warm and enjoy!
