  • 2 cups cooked quinoa Cook according to package instructions.
  • 2 pieces grilled chicken breasts Grill until cooked through, then slice.
  • 1 cup mixed berries (strawberries and blueberries) Fresh berries work best.
  • 4 cups mixed greens Spinach and arugula are recommended.
Dressing Ingredients
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice Freshly squeezed is preferred.
  • 1 teaspoon salt
  • 1 teaspoon pepper

Method
 

Preparation
  1. Cook the quinoa according to the package instructions, then set it aside to cool.
  2. While that’s happening, grill the chicken until it’s cooked through, then slice it into tasty strips.
  3. In a roomy bowl, combine the quinoa, your choice of mixed greens, the juicy berries, and the sliced chicken.
Preparation of Dressing
  1. To make the dressing, combine olive oil, lemon juice, salt, and pepper in a small jar. Shake it up until it’s combined.
Serving
  1. Drizzle that fresh dressing over your salad, giving everything a gentle toss to coat it beautifully.
  2. Serve immediately for lunch or dinner or refrigerate it for meal prep throughout the week.
