  • 2 medium sweet potatoes, cubed Can replace with butternut squash for a different sweetness.
  • 1 cup cooked rice White or brown rice can be used.
Seasoning and oil
  • 2 tablespoons olive oil For roasting sweet potatoes.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper Season to your preference.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the sweet potato cubes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the seasoned sweet potatoes on a baking sheet and roast for about 25–30 minutes until tender.
Cooking Chicken
  1. While the sweet potatoes are roasting, heat a skillet over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook until browned and fully cooked through, about 6–8 minutes.
Assembly
  1. In a bowl, layer the cooked rice, roasted sweet potatoes, and savory chicken.
  2. Top with fresh greens if desired. Enjoy!

Notes

Best enjoyed with a drizzle of olive oil or your favorite vinaigrette. Leftovers store well in an airtight container for up to three days in the fridge or three months in the freezer.
