Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Sauté the chopped bell peppers and spinach in the oil until the vegetables are tender — about 4-5 minutes.
  3. Add the cherry tomatoes and cook just until they start to soften, retaining a little of their juicy bite.
  4. In a serving bowl, add a generous scoop of cottage cheese.
  5. Top with the sautéed vegetables and season with salt and pepper to taste.
  6. Serve warm and enjoy every mouthful!

Notes

Consider adding fresh herbs like basil or parsley for brightness, and serve alongside a fresh green salad or crusty whole-grain bread. A splash of hot sauce can also add a kick!
