  • 1 cup cottage cheese Choose full-fat or low-fat according to preference.
  • 2 large ripe bananas, mashed Bananas should be heavily speckled with brown spots.
  • 2 eggs
  • 1/4 cup honey or maple syrup Feel free to swap with your favorite liquid sweetener.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup whole wheat flour Can be substituted with almond flour for a gluten-free option.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon Consider adding some nutmeg for extra flavor.
  • 1/2 cup chopped walnuts or chocolate chips Optional for added texture.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the cottage cheese, mashed bananas, eggs, honey or maple syrup, and vanilla extract. Stir until well blended.
  3. In another bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. If desired, fold in walnuts or chocolate chips.
  5. Pour the batter into the prepared loaf pan, smoothing the top gently.
Baking
  1. Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow it to cool for a few minutes in the pan before transferring to a wire rack. Once cooled, slice and serve.

Notes

Best enjoyed warm with a dab of butter or a drizzle of honey. Store in an airtight container at room temperature for 2-3 days or freeze for longer storage.
