  • 12 large large eggs
  • 16 ounces full-fat cottage cheese
  • 1 large red bell pepper, diced
  • 1/2 cup diced yellow onion
  • 4 cups chopped spinach
  • 1/4 cup shredded Gruyère or Gouda cheese Can substitute with mozzarella or feta.
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F and generously spray a 9x13 baking pan with cooking spray.
  2. Spread the bell peppers, onions, and spinach into an even layer at the bottom of your baking dish.
  3. Crack the eggs into a large mixing bowl and whisk them well.
  4. Add the cottage cheese, seasoning, and 1/4 cup of the shredded Gruyère or Gouda to the eggs, and mix until well combined.
  5. Pour the egg and cottage cheese mixture over the vegetable layer, spreading it smoothly.
  6. Top with the remaining shredded cheddar cheese.
Baking
  1. Place the assembled bake in the oven on the middle rack and bake for about 50-55 minutes, until set in the middle and lightly golden on top.
  2. Allow it to cool for at least 15 minutes before slicing and serving.
