  • 2 large onions, thinly sliced
  • 2 cups beef broth Or substitute with chicken broth for a lighter flavor.
  • 1 cup shredded Swiss cheese Gruyère or mozzarella can be used as alternatives.
  • 2 tablespoons olive oil
  • 1 teaspoon thyme Feel free to use rosemary as an alternative.
  • to taste salt and pepper
  • 1 tablespoon balsamic vinegar Optional ingredient.
  • to garnish chopped parsley

Method
 

Cooking Instructions
  1. In a large skillet over medium heat, add the olive oil.
  2. Toss in the sliced onions and cook them until golden brown, about 15-20 minutes, stirring occasionally.
  3. Season the chicken breasts with salt, pepper, and thyme. Push the onions to one side of the skillet, then add the chicken. Brown for about 5-7 minutes on each side.
  4. Pour the beef broth (and balsamic vinegar if using) over the chicken. Bring to a gentle simmer, cover the skillet, and let it cook for another 10-15 minutes until the chicken is fully cooked.
  5. Top the chicken with Swiss cheese and cover the skillet until the cheese melts.
  6. Serve hot, garnished with freshly chopped parsley.

Notes
