- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat. Add the diced onion and cook until softened.
- In a baking dish, layer half of the sliced potatoes. Season them with a pinch of salt and pepper.
- Distribute the cooked beef and onion mixture evenly over the potato layer.
- Spread the can of cream of mushroom soup over the beef layer, and then add the remaining potato slices on top.
- Sprinkle the shredded cheese generously over the potatoes.
- Cover the dish with foil and bake for about 1 hour.
- Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly.
- Let it cool for a few minutes before serving.
