- In a slow cooker, combine the chopped onion, diced carrots, diced celery, and minced garlic.
- Pour in the vegetable or chicken broth, and add the can of diced tomatoes with their juices.
- Toss in your chopped green beans and cubed potatoes.
- Season everything with dried thyme, basil, salt, and pepper.
- Gently stir to combine all the ingredients, then cover with the lid.
- Let it cook on low for 6-8 hours, or on high for 3-4 hours, until the veggies are tender.
- Taste and adjust seasoning if needed.
- Serve it hot, ideally with a lovely piece of crusty bread on the side.
