Method
 

Preparation
  1. In a slow cooker, combine the chopped onion, diced carrots, diced celery, and minced garlic.
  2. Pour in the vegetable or chicken broth, and add the can of diced tomatoes with their juices.
  3. Toss in your chopped green beans and cubed potatoes.
  4. Season everything with dried thyme, basil, salt, and pepper.
  5. Gently stir to combine all the ingredients, then cover with the lid.
  6. Let it cook on low for 6-8 hours, or on high for 3-4 hours, until the veggies are tender.
  7. Taste and adjust seasoning if needed.
  8. Serve it hot, ideally with a lovely piece of crusty bread on the side.
