  • 4 pieces chicken breasts Boneless, skinless preferred
  • 1 cup honey BBQ sauce Adjust for spiciness or flavor preference
For the Garlic Parmesan Potatoes
  • 2 pounds baby potatoes Halved for quicker cooking
  • 3 tablespoons olive oil For tossing the potatoes
  • 1/2 cup grated Parmesan cheese Can substitute with stronger cheese like Asiago
  • 3 cloves garlic, minced Freshly minced for best flavor
  • to taste Salt and pepper Season to preference
  • Fresh parsley for garnish Optional for presentation

Method
 

Preparation
  1. Preheat your grill to medium heat to ensure chicken gets a great char.
  2. Coat chicken breasts with honey BBQ sauce and marinate for about 15 minutes.
  3. Wash and halve the baby potatoes.
  4. Combine halved potatoes with olive oil, minced garlic, Parmesan cheese, salt, and pepper in a bowl and toss well.
Grilling
  1. Place the marinated chicken on the grill and cook for about 6-7 minutes on each side until the internal temperature reaches 165°F.
  2. During the last 10 minutes of grilling, place the seasoned potatoes on a baking sheet to grill until tender and golden brown, stirring occasionally.
Serving
  1. Serve the grilled chicken with the cheesy, garlicky potatoes and garnish with fresh parsley.
