For the chicken
  • 2 pieces chicken breasts Boneless and skinless
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • 1 teaspoon paprika (optional)
For the sweet potatoes
  • 2 pieces sweet potatoes, cubed Can substitute with butternut squash
  • 1 tablespoon olive oil For tossing sweet potatoes
  • to taste Salt and pepper
  • 1 tablespoon fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, whisk together honey, minced garlic, soy sauce, olive oil, salt, pepper, and paprika if using.
  3. Place the chicken breasts in a baking dish and pour the honey garlic sauce over them, ensuring they are well coated.
  4. In another baking dish, toss the cubed sweet potatoes with olive oil, salt, and pepper until nicely coated.
Cooking
  1. Place both dishes in the preheated oven. Roast for about 25-30 minutes or until the chicken is cooked through and the sweet potatoes are tender.
  2. Once done, sprinkle with fresh parsley for a lovely touch before serving warm.

Notes
