  • 1 lb Baby potatoes Halved.
  • 1 lb Fresh green beans Trimmed.
  • 1/4 cup Honey Using good quality honey enhances flavor.
  • 3 cloves Garlic Minced.
  • 2 tbsp Olive oil For tossing ingredients.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Chop the smoked sausage into bite-sized pieces, halve the baby potatoes, and trim the green beans.
  3. Toss everything together in a large bowl with olive oil, minced garlic, salt, and pepper.
Cooking
  1. Spread the mixture in a single layer on a parchment-lined sheet pan.
  2. Bake for about 20-25 minutes, or until the potatoes are tender and the sausage is golden.
  3. Drizzle with honey during the last few minutes of baking for a beautiful caramelization.
  4. Return to the oven for another 5 minutes to achieve a lovely sticky glaze.

Notes

Best served on a large platter with a sprinkle of fresh herbs like parsley or thyme. Great with side salads or crusty bread to soak up honey-garlic goodness. Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven for best results.
