Ingredients
  

For the chicken marinade
  • 2 pieces chicken breasts Boneless, skinless
  • 1/4 cup honey
  • 1/4 cup lime juice Freshly squeezed is best
  • to taste Salt
  • to taste Pepper
For the bowl assembly
  • 2 cups cooked rice White or brown rice
  • 1 piece avocado, sliced
  • a handful Fresh cilantro Optional for garnishing

Method
 

Marination
  1. In a bowl, whisk together honey, lime juice, salt, and pepper until well combined.
  2. Marinate the chicken breasts in the honey-lime mixture for at least 30 minutes. Aim for a couple of hours if you can; the longer, the better!
Cooking
  1. Heat your grill or pan over medium-high heat and grill or pan-sear the chicken until it reaches an internal temperature of 165°F and is beautifully golden brown on the outside.
  2. As that’s cooking, prepare your rice according to the package instructions—fluffy rice pairs perfectly with our flavorful chicken.
Assembly
  1. To serve, create a beautiful base with the cooked rice in a bowl.
  2. Slice the chicken and elegantly arrange it over the rice.
  3. Top with fresh avocado slices and sprinkle cilantro if you wish.
